Fried Rice

So simple, but so good!




Fried Rice

4 cups cold cooked rice, cooled
2 large eggs
1/2 tsp salt
1/4 tsp pepper
4 Tbl canola oil
1/2 cup thinly sliced scallions
2 to 3 Tbl soy sauce
1 cup peas
1 cup diced carrots
1/2 cup diced cooked ham, chicken, or shrimp (optional)

Directions
Place rice in large bowl and break up any lumps and set aside
Beat eggs in separate bowl with salt and pepper and set aside
Pour the oil into a wok and place over medium-high heat
When the oil is hot, add scallions
Stir in eggs and scramble
Add rice and mix thoroughly
Pour soy sauce evenly over the mixture
Add peas, carrots and meat if desired
Stir constantly until it is mixed and heated through and serve

Tip:  Don't throw out your left over white rice from a previous meal.  This recipe does really well with left over rice right out of the fridge!
