Southwestern Quinoa Salad

I am always looking for good side dishes.  This is one, and it is so much easier than you think.  It is really good served warm or cold.



Southwestern Quinoa Salad

1 tsp vegetable oil
1 cup onion, chopped
3 tsp chopped garlic
3/4 cup uncooked quinoa
1 1/2 cup vegetable or chicken stock
1 tsp ground cumin
salt and pepper to taste
1 cup frozen corn kernels
1 can black beans, drained and rinsed
1/2 cup chopped fresh cilantro
1 fresh lime, zest & juiced

Directions
Heat oil in medium saucepan over medium heat
Stir in onion, garlic, and lime zest
Saute until onion is translucent
Mix quinoa and stock into saucepan
Season with cumin, salt and pepper
Bring mixture to a boil
Cover, reduce heat, and simmer for 20 minutes
Stir in frozen corn, beans and cilantro
Squeeze juice from fresh lime over mixture
Warm through and serve
